The Vineyard
The Mopeta Vineyard of the Dennis Family can be viewed
from the Bridle Track, nestled between the western
slopes of the Southern Flinders Ranges and Spencer Gulf
in South Australia. It is situated at Baroota, 250 kms
north of Adelaide. The LabelRead the story behind Our Label. The WinesBridalTrack WineThe Shiraz, Cabernet Sauvignon and Merlot grapes, used to make the wine for this label, were harvested in the cool of the night to retain the best aromas and flavours. The grapes were crushed and destemmed, seeded with yeast and fermented at cool temperatures in small, open fermenters. The wine is gently hand plunged to extract fine tannin and flavour. This process lasts around ten days. Upon completion of ferment the grape must is pressed in an airbag press, settled off of gross lees and put to French Oak barrels where the secondary malolactic fermentation takes place. The wine is matured for approximately 12 months in underground cellars with minimal handling. The wine is carefully racked from barrels to avoid the filtration process, bottled and packaged on site at the winery. All of our wines are made by Paul Drogemuller of Paracombe Wines, in the Adelaide Hills.
